write a cover letter to explain why you can't provide an employment letter, for example you can say you are finding jobs now, you just need a break at Ireland, and will come back UK for work....
no worry, as long as you have sufficient fund, and Irish visa is not that difficult to obtain. Basicly they just accept postal application, normally take 1 week to process.

Ls'ls, I think it is difficult to get the thing you want-contact the Irish Embassy for information
Ls, PSW will be terminated from April 2012
